Artichoke Dip Low Carb Appetizer

Ingredients

  • Cooking spray
  • 2 large cans of artichoke hearts
  • 3/4 cups of mayonnaise
  • 1 cup of grated parmesan cheese

Directions:

  1. Spray medium casserole dish with cooking spray.
  2. Drain both cans of artichoke hearts.
  3. Chop the artichoke hearts and put them into a bowl.
  4. Stir in mayonnaise and cheese.
  5. Pour the mixture into the casserole dish.
  6. Bake in a 350 degree oven for approximately 25 to 30 minutes.
  7. Serve warm with cut celery, fresh broccoli or low carbohydrate tortilla chips.

Low Carb Bacon, Cheese and Pepper Poppers

Ingredients

  • Cooking Spray
  • 20 ounces of cheddar cheese
  • 8 jalapeno peppers
  • 12 slices of turkey bacon

Directions:

  1. Spray broiler pan with cooking spray.
  2. Cut the jalapeno peppers in half lengthwise. Remove seeds.
  3. Cut the cheese into slices lengthwise.
  4. Place cheese slices into peppers
  5. Wrap the turkey bacon around the jalapenos.
  6. Place all of them on the broiler pan.
  7. Broil for approximately 8 to 10 minutes until the bacon is done.

Low Carb Stuffed Mushrooms

Ingredients

  • Cooking spray
  • 1 pound of fresh mushrooms
  • 8 ounces of canned crabmeat
  • 1/2 cup of chopped onions
  • 1 tsp. of Italian seasoning
  • 1/4 cup of grated cheese (parmesan or cheddar)
  • 1/4 cup of mayonnaise

Directions:

  1. Lightly spray shallow pan with cooking spray.
  2. Rinse the mushrooms and dry.
  3. Remove stems and some of the inside of the mushroom to hold the stuffing.
  4. Mix drained crabmeat, chopped onions, Italian seasonings, grated cheese and mayonnaise in a medium mixing bowl.
  5. Scoop the crabmeat mixture by heaping spoonfuls into the mushrooms.
  6. (Optional) Sprinkle additional cheese over the mushrooms.
  7. Bake in 350 degree oven for approximately 12 to 15 minutes.
  8. Serve hot.

Low Carb Spicy Meatballs

Ingredients

  • Cooking Spray
  • 1 pound of lean ground beef
  • 1 egg
  • 1/4 cup of seasoned bread crumbs
  • 1/4 cup of finely chopped onions
  • 1/4 teaspoon of ground cayenne pepper
  • 1/4 teaspoon of cinnamon
  • 1 tablespoon of ketchup
  • 1 tablespoon of Worcestershire sauce
  • 1 can of condensed tomato soup
  • 1/2 cup of water
  • 1 tablespoon of Italian seasoning

Directions:

  1. Spray large skillet with cooking spray.
  2. In a medium mixing bowl, combine ground beef, egg, bread crumbs, chopped onions, ketchup, Worcestershire sauce, cayenne pepper and cinnamon. Mix well.
  3. Form meatballs, place in skillet and brown on medium-high.
  4. In a bowl, mix the tomato soup, water and Italian seasoning.
  5. Pour the soup mix over the meatballs and cook over low heat until the meatballs are done.
  6. Serve hot.

Low Carb Marinated Mozzarella Appetizer

Ingredients

  • 16 to 20 ounces of mozzarella cheese
  • 2 teaspoons of balsamic vinegar
  • 1/4 cup of olive oil
  • 2 tablespoons of chopped fresh basil
  • 1 teaspoon of ground black pepper

Directions:

  1. In a medium bowl, mix vinegar, oil, basil and black pepper.
  2. Whisk until well blended.
  3. Cut the mozzarella cheese into cubes and add to the marinade.
  4. Cover and chill for at least 3 hours.
  5. Serve with toothpicks.
