A baking mix is a recipe starter base, used to whip up cakes, cookies, biscuits, pancakes or muffins in record time.

What is a baking mix and what foods can be made from it?

A baking mix or master mix, as it is called, is a mixture of essential baking ingredients, mixed ahead of time & stored in a large container. It is a starter base, which calls for the simple addition of liquids and eggs.

Having a baking mix on hand cuts food preparation time to a minimum.

Baking Mix Recipe

9 cups of white flour

¼ cup of double-acting baking powder (like Magic or Blue Ribbon)

1 tbsp. salt

2 cups of vegetable shortening

Combine flour, baking powder, and salt. Cut in (room temperature) shortening until mixture resembles coarse crumbs. Your homemade baking mix is now ready to be stored in a large, sealed container and will keep for several months.

Baking Mix Recipes

Quick Pancakes

  • 1½ cups baking mix
  • 1 tbsp. sugar
  • ¾ cup milk
  • 1 egg

Add sugar, milk, and egg to mix. Stir until well blended. Drop batter on greased griddle until pancakes are bubbled and cooked in the middle.

  • For fruit pancakes add ½ cup fruit of choice.

Baking Mix Muffins

  • 3 cups baking mix
  • 3 tbsp. sugar
  • 1 cup milk
  • 1 beaten egg

Blend mix and sugar. Add in milk and egg. Drop batter into greased muffin tins and bake in 325-degree oven until done.

  • For blueberry muffins add 1 cup of blueberries mixed with ¼ cup of sugar.
  • For cranberry muffins add 1 cup of cranberries mixed with ½ cup of sugar.

Easy Biscuits From a Master Mix

  • 3 cups baking mix
  • ¾ cup milk

Make a well in mix. Add the milk and stir lightly. Turn onto floured surface and knead into ½ inch thickness. Cut in rounds and bake at 350 degrees until golden brown.

Baking Mix Coffee Cake

  • 3 cups baking mix
  • ½ cup sugar
  • ½ cup milk
  • 1 egg

Blend mix and sugar. Add in milk and beaten egg. Beat until well blended. Spread batter into greased pan.

Top with:

  • ½ cup brown sugar
  • 2 tbsp. butter
  • ¼ tsp. cinnamon
  • ¼ tsp. nutmeg

Combine ingredients and spread over batter. Bake coffee cake at 325-350 degrees until done.

Quick Meat Pie

  • 2 cups cooked hamburger
  • 1 can cream of mushroom soup
  • 2/3 cup shredded cheese
  • 1 cup diced tomatoes

Mix meat and soup together and spread in a greased pie plate or cake pan. Top with cheese and tomatoes.

Combine:

  • 2 cups baking mix
  • ½ cup milk

Spread dough over meat pie ingredients. Bake at 325-350 degrees until crust is golden.

Baking Mix Chocolate Chip Cookies

  • 1½ cups baking mix
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 tsp. hot water
  • 1 cup chopped pecans
  • 1 6oz. pkg. chocolate chips

Blend baking mix and sugars. Add in egg, vanilla, and water. Stir in pecans and chocolate chips and drop by tsp. onto greased cookie sheet. Bake at 325 for about 15 minutes.

Baking Mix Caramel Pudding

  • 1 cup of brown sugar
  • 3 tbsp. butter
  • 1 tsp. vanilla
  • 2 cups of boiling water

Spread brown sugar into greased cake pan. Dot with butter. Add vanilla and boiling water. This is your sauce.

Top sauce with:

  • 1½ cups baking mix
  • ½ cup sugar
  • ½ cup milk
  • 1 tsp. vanilla
  • 1 cup chopped nuts

Stir all ingredients together for your cake batter and drop by spoonfuls over liquid in pan. Bake at 325 for about 30-40 minutes.

I think it is excellent, and I have been looking for this a very long time. The master mix used to be a common thing for all 4h girls in the 50's It is wonderful, time saving ,and we know exactly what is in it. Thank you

Yes, it's a real time-saver. We used to always have a large bin with the dry ingredients at the ready and found master mix a boon to baking.
