Vegans and vegetarians appreciate a hearty vegetable soup without meat. Unfortunately, a lot of vegetable soup recipes have a beef base. This one, however, is pure vegetable and tasty!
What's So Great About Vegetable Soup?
Even omnivores should appreciate many of the health benefits that a dish like vegetable soup offers. First off, vegetable soup contains lots of fiber. Fiber is good for a number of reasons - it keeps people "regular" and helps people feel fuller than foods with little or no fiber. This particular recipe has about 4 grams of fiber per 1 cup serving. And it has virtually no fat.
This particular soup is also low in calories. At 120 calories per serving, a person can eat more than one serving and not feel guilty.
What gives this soup its flavor is vegetable broth. It tastes so good, the beef won't be missed!
Vegans might like this soup with a few crackers, a whole wheat tortilla, or a cucumber and tomato sandwich. Lacto-vegetarians might prefer a lightly-toasted grilled cheese sandwich. This vegetable soup has a hearty flavor, so mild accompanying flavors might be preferred.
Finally, other veggies can be added (or taken out of the soup) according to taste. Green beans and celery, for example, are delicious in this soup. Others might also prefer to add wheat corkscrew pasta or brown rice.
Vegan Vegetarian Soup Recipe
Ingredients:
- Two 14-ounce cans vegetable broth
- Two 8-ounce cans tomato sauce
- One 14.5 ounce can diced tomatoes in juice
- Two large russet potatoes, peeled and diced
- Two large carrots, diced
- 1/2 cup white onion, diced
- One cup green peas, fresh or frozen
- One cup corn, frozen
- Dash salt (optional)
Directions:
- Open cans of vegetable broth, tomato sauce, and diced tomatoes, and empty into a large pot or Dutch oven. Add all fresh vegetables. Bring to a boil. Cover and reduce to a simmer. Cook for approximately 40 minutes to an hour or until potatoes and carrots are cooked through, tender but firm.
- Add frozen corn (and peas at this point, if frozen) and warm through, approximately 5 more minutes. Add salt, if desired. If soup is too thick, one cup of water (or more) can be added.
- Serve hot. Refrigerate leftovers. Leftovers can also be frozen.

Vegetable soup is filling and full of flavor. This particular kind is robust and tangy, and ingredients can be mixed and matched according to one's tastes. Even the meat eaters in the family can appreciate this vegetarian soup. Who wouldn't, considering it's low fat, high fiber, and great tasting?
