Wheat Free Whole Grain Peach Apple Crisp - The Food Librarian
This version of the Whole Grain Peach Crisp does not have any wheat ingredients, yet is still delicious and made with whole grain ingredients.

As with the Whole Grain Peach Crisp, try using virgin oils for added nutrition. Keep in mind while the ingredients used, all derived from oats or millet make this recipe wheat free, it is not gluten free unless you purchase and use oats and oat products that are specifically grown without gluten in it.

Wheat Free Whole Grain Peach Crisp

Ingredients:

Filling:

  • 6-7 peaches or 2 lbs. frozen sliced peaches
  • 2 tablespoons whole grain oat millet flour
  • Juice from one lemon
  • 2 teaspoons cinnamon or to taste
  • ½ cup water

Topping:

  • 1 cup whole oats
  • 1/3 cup toasted oat bran
  • ½ cup whole grain oat or millet flour
  • ½ cup brown sugar
  • 2 teaspoons cinnamon or to taste
  • ½ cup oil (virgin coconut, walnut, or olive oil)

Cooking Directions:

  • Preheat oven to 350 degrees.
  • Slice peaches into thin slices. Leaving the skins on will not affect the taste of this dish.
  • Mix filling ingredients and line bottom of baking pan with peaches. Sprinkle ½ cup water over filling.
  • Mix ingredients for crunch topping, making sure the oil is evenly mixed with the flour and grains. Spread topping mixture evenly on peaches in the baking pan.
  • Cook at 350 degrees for 25 minutes or until the peaches are soft. A fork should go through the peach mixture easily and the topping should be browned and crispy.

Time-Saving Tip for Slicing Peaches:

Take the knife and cut slices all around the peach, cutting from the skin down to the center where the pit is. Cut from top to bottom in this fashion, creating the slices right on the pit. This is more efficient than sawing off the flesh of the peach in some random fashion then slicing the pieces. If the peach is sufficiently ripe, the peach slices will fall off the pit with hardly any coaxing at all. Sometimes the slice falls off as you are slicing the peach.

Cooking Tips:

This recipe is easy to make and does not take a lot of preparation time. The biggest task is fruit slicing if you are using fresh fruit, and is healthier than using frozen fruit. Using fresh fruit will also make a big difference on the taste and consistency of your finished product. If using the frozen product, keep in mind that you will not need to cook it as long as fresh peaches.

You may not need as much water in the pan for frozen peaches. Decrease the amount to ¼ cup water.

You can adjust the amount of topping and the amount of peaches to your taste. It doesn’t hurt to make a double recipe of the topping to use for extra crunchy sweetness, or to freeze it and use the next time around.
